In Sanskit, the word Ayur means 'Life' and Veda means 'Knowledge.' Ayurveda, the world's oldest and most comprehensive health system, is about using the Knowledge of your Life—of every part of yourself—to guide you as you manage inputs like diet, exercise, environments and relationships. A part of this philosophy is based on preventing physical or physiological imbalances, such as maintaining a healthy body and mind. Ayurveda is the mother of all medicine, one which teaches individuals how to align themselves with Mother Nature.

In this class taught by Ayurvedic Nutritionist Noel Graupner, who also designed The Assemblage Food & Beverage program, you will learn the basic principles of Ayurveda, beginning with the basic definition of 'health' as balance. We will discuss the theory of the five elements and three doshas, and take a quiz to help you identify your constitution, your number one tool to find and maintain your own unique balance! Handouts will be given and note-taking is encouraged.

For many, the journey to  Ayurveda arrives from the bountiful relationship with yoga, when we realize the practices of asana, pranayam, and meditation are shared components of the Ayurvedic life sciences. Another critical component to complete wellness, especially in the modern world, is Panchakarma: seasonal cleansing rituals. Cleansing rituals are critically important to urban people in these times. MYNYC is teaming up with Ayurvedic nutritionist and cook Noël Graupner to offer Modo yogis a unique opportunity to learn about Yoga's sister science, Ayurveda, and experience a comprehensive Ayurvedic Spring cleanse (also known as Panchakarma) which includes diet, herbal, and movement purification practices aimed at helping the body identify stored winter fat tissue as useable energy, resetting the metabolic function and digestive capacity of all the tissue layers of the body. Accumulated and stored toxins are brought to the surface of tissues and gently escorted out through elimination channels. The result of the Spring Panchakarma are empowered digestive and immune systems as well as a purified mind to transition gracefully and energetically from the heavy, dulled winter into the light, auspicious Springtime. 

The cleanse will be offered in 3-, 5-, and 7- day packages, and will include a daily 3-meal supply of Ayurvedic kitchari*, daily herbal tisanes*, a jar of Noël’s home made ghee*, a pouch of triphala*, as well as a daily yog classes at Modo West Villag. A complete toolkit containing Ayurvedic cleansing tools and oils (herbalized body massage oil, herbalized oil-pulling oil, herbalized nasya oil, copper tongue scraper, copper neti pot, thymed-neti salt) may also be purchased separately for $130.

Ayurveda recommends a cleanse to accompany a change in season, to clear channels and rid the body of accumulated toxins. Spring is an especially important time of the year when nature re-awakes and provides us with all the food tools we need to rid the body of excess fats and heavy proteins! As an alternative to ascetic juice cleanses, Noël will ntroduc uests o a traditional Ayurvedic recipe that is satisfying to the palate and detoxifying for the body: kitchari. 

This will be an educational dinner, with a brief introduction to Ayurveda Spring Cleansing. Guests will have an opportunity to practice Ayurvedic mindful eating techniques during dinner. Recipes will be shared, and all guests will take home a sample of Noël's spring digestion tea.

In Ayurveda, an ancient medical science from India, toxins that accumulate in the body are called ama. These toxins result from the accumulation of impurities in our bodies as a result of improper diet, chronic stress, and exposure to chemical pollutants in the products we engage with and environments within which we operate. THE BABE COLLECTIVE PRESENTS : FEAST ; A COMMUNITY DINNER AND WELLNESS WORKSHOP

This month's menu theme is APHRODISIACS and it is based on Spring foods which become available to us just as our bodies need light, warm, dry, and rough foods. They are the antidote to the dampness of the Spring Season and the heaviness that has accumulated throughout the Winter Season. In Ayurveda, these are called Kapha pacifying foods. Our meal will be filling but without leaving you feeling heavy. In fact, the foods and herbs included in these dishes will help kindle your internal fire, brighten your light, and perhaps draw you towards the radiance of the other guests as each dish contains at least one aphrodisiac. Find yourself first admiring your dinner, then perhaps your neighbor ...

As each dish is served, the healing properties of the relevant ingredients will be explained. 
Guests will leave with a sample of Noël's aphrodisiac tea along with aphrodisiac bliss balls. We'll talk about mindful eating as well and be led in a guided meditation with Robin to set the stage for bliss and pleasure.

It could be that your agni, or digestive flame, has been worn out and dulled by the heavy diet of the Winter. Strong agni, what may be understood as metabolism, is essential to maintenance of proper health. Ayurveda recommends a cleanse to accompany a change in season, to clear channels and rid the body of accumulated toxins. Spring is an especially important time of the year when nature re-awakes and provides us with all the food tools we need to rid the body of excess fats and heavy proteins built up in our bodies through the cold Winter.  

In this class, you will learn the basics of Panchakarma, or Ayurvedic seasonal cleansing, which aids in the elimination of ama, and rejuvenates, strengthens, and return balance to your body and mind. We will discuss practical dietary guidelines with reference to what to eat, which teas to drink, and which herbs to take to ignite your agni, boosting sluggish metabolism and gently removing ama, or waste, from the body tissues. We will also discuss rituals to incorporate into your daily routine to promote detoxification of the body and mind.

Handouts will be given and taking notes will be encouraged! A cleansing nettles tea will be served during class.

Spring Kitchari made from moong dahl, basmati rice, spring vegetables and spices will also be available for lunch for an additional $12.

Ayurveda is a Sanskrit word meaning life knowledge. It is the name of the world's oldest comprehensive health system, one which offers unique insight into creating balance among all realms of wellness, physical, intellectual, emotional, and spiritual, using tools like diet and plant remedy, lifestyle practices, movement and yoga, and meditation to create harmony between the mind, body, and natural world. 

Balance in mind and body is divine, natural order according to Ayurveda. Balance is our true nature and can otherwise be defined as health and happiness. The goal of this class is to familiarize students with the principles of Ayurveda that teach individuals how to move towards a place of balance, of health and happiness.

In this class, you will learn the basics of Ayurvedic theory, the five elements and 3 doshas, used to determine one’s unique mind-body type and constitution which can be understood as one’s true nature. Following will be an explanation of how physiological imbalances can develop along with how they can be properly identified, eliminated, and prevented in the future.

In this two-part series that is a cooking class and informational lessons, Noël Graupner will teach students on the fundamentals of an Ayurvedic diet, so that they can lead a happier and more mindful relationship with food. The second class of the series will be an Ayurvedic-based detox in time for the changing seasons. As an alternative to ascetic juice cleanses, I will walk students through recipes that are satisfying to the palate and our bodies.

In Ayurveda, toxins that accumulate in the body are called ama. The toxins result from the accumulation of impurities in our bodies as a result of improper diet, chronic stress, and pollutants from the environment. Symptoms of ama accumulation are lethargy, low energy, generalized aches and pains, lack of mental clarity, heaviness in the body, digestive problems (such as constipation, gas, bloating, or heartburn), weakened immune system, frequent colds and sinus infections, coated tongue, body odor, etc.

Ama is a special concept in Ayurvedic medicine, described as the underlying cause of many health issues. In this class, you will learn about the three types of ama, how ama forms, signs and symptoms of ama, and most importantly, how to eliminate from your body through diet, herbs, daily routines and lifestyle practices. During class we will sample several herbs and prepare a cleansing tea. Everyone will leave with a sample of tea.

Many women suffer from (pre- and) menstrual imbalances like acne, anxiety, fluid retention, sugar and chocolate cravings, mood swings, irritability, bloating, edema, headaches, cramping, breast tenderness, fatigue and lean on a limited number of tools for support. In fact, these major indicators of hormone balance are often minimized, as women accept PMS discomfort and irregularity in flow as normal. Symptoms like these should not be taken lightly! The healing system of Ayurveda teaches that PMS problems are warning signs from the body that something is out of balance. Your body is communicating to you and it’s time to start listening! We will also talk about general Ayurvedic recommendations to balance hormones and create a balanced cycle. She is identified as Shakti, a sanskrit word that translates to power, and it is through her that the dynamic forces of the universe flow to generate ideas, growth and change within the world. When a woman is connected with Nature, she is alive, luminous and desirable! She feels vital and full of energy, with a clear and inquiring mind, glowing skin, and courage and residence in the face of stress. 

The modern woman, especially in urban settings like New York City, has grown distant from her innate relationship with Nature. In the city she is inundated by stress, high-demands, pollution, and adulterated views of reality that can weigh down her spirit and cause imbalance in the physical, mental, and emotional bodies. Fortunately many of these imbalances can be easily remedied through the wisdom of Ayurveda!

In this class, I will be introducing several powerful Ayurvedic herbs and spices that, used properly, improve the body’s ability to manage the stresses of life in New York City, help to balance hormones, improve digestion and generally bring the body, mind, and spirit to a balanced state. In this class, you will learn a number of techniques and tools to incorporate into your morning routine that improve detoxification of the body and others to use during the evening that nourish the body and settle the mind before rest.
